A member of the Endive family that is also known as Italian chicory. A leaf vegetable that produces deep red leaves that form into a tight compact head. The leaves have a bitter spicy flavor that mellows when roasted or grilled in olive oil, and served hot with balsamic vinegar. Cooking removes the bitterness and brings out the sweet flavor.
Planting Instructions: Sow seed directly in soil as soon as the ground can be worked.
Preparation Ideas: Use for salads for cooking.
