Brassica oleracea var. sabellica
- For a sweeter taste, wait until the first frost before harvesting kale.
- 55-60 days to Maturation
- Don’t remove the central bud, as it will produce more leaves.
- When the outer leaves are 6-8 inches long, which usually takes 55-60 days after transplanting, you can pick them as needed.
- Keep kale in the fridge for 5-7 days in a sealed bag. Only wash it when you are ready to use it.
- Kale can replace lettuce, cooked cabbage and collards in your dishes.
This cold-hardy cabbage relative grows about 18”/45cm tall and is topped with attractive, light green, frilly leaves. Use the leaves mixed with other greens in salads, as cooked greens, in stews and as a garnish. Tastiest crops are timed for harvest during the cool weather of spring and autumn. Kale grows well in containers, and plants make an attractive addition to flower gardens
