Pimento is the Spanish word for “pepper”. The flesh is very thick, sweet and red to reddish-yellow at maturity. You’ve probably had pimentos in potato salad or stuffed in a green olive. They are juicy and aromatic and after often served in green or pasta salads or served as appetizers. A very useful variety for stuffing and is superb for canning whole. May be grown in pots.
