Also called Chinese sugar pod peas. These tall-growing edible-pod peas require supports for the vines to climb up off the ground. Pods should be picked when young and tender, before the peas swell the pod. If left to mature, the peas are still edible shelled, but the pod will be fibrous. Pods may be eaten raw, sliced into salads and used as a dip; or cooked, either boiled or steamed or sautéed.
Plant grows best if seeds are treated with inoculant before sowing. Pick while pods are still nearly flat, just as peas begin to bulge. A good source of fiber, minerals, vitamins A and C and some of the B vitamins. Edible-podded peas are noted for their crunchy tender flat pods with small succulent edible seeds inside.
