Also known as Bok Choy, this is a non-heading Chinese cabbage that is delicious and easy to grow. Leaves and stalks are tender-crisp, sweet, and mild flavored, especially if timed for cool weather. Use leaves fresh in salads or stir-fried; stalks can be used fresh like celery, or stir-fried. Plant resembles Swiss Chard.
